125 ml Coconut Oil

Pre-heat oven to 175°C / 350°F. Grease and flour a 9x13 inch pan. Line the bottom with parchment paper. |

In a food processor, process 45 gr of oatmeal into a fine powder. Transfer to a bowl and add the remaining 45 gr of oatmeal, the flour, and 2 tsp of baking powder. Stir to combine. Set aside. |

In another bowl, beat 2 eggs, 180 gr of brown sugar, and 1 tsp of vanilla with an electric mixer until the mixture triples in volume. |

At low speed, drizzle in 125 ml of coconut oil. |

Stir in the dry ingredients alternately with 125 ml of milk. |

Add 180 gr of chocolate chips and stir with a wooden spoon. |

Pour into the prepared pan. Bake for about 1 hour or until a toothpick inserted in the centre of the cake comes out clean. Let cool and unmould. Let cool on a wire rack. |
