Pre-heat oven to 190°C / 375°F. |

In a bowl, whisk together 200 gr of unbleached all-purposed flour and 1/2 tsp of salt. Add 100 gr of unsalted butter and rub between your fingertips, incorporating the mixture as you work, until the butter forms flaky pieces. |

Separatly, whisk 1 egg and combine with mixture until just moistened. Pieces of butter will remain and the dough will be soft and sticky. |

On a lightly floured surface or between two silicone baking mats, roll out the dough into an 11 inch (28 cm) pie plate. Fold the excess dough inward, pressing the edges to double the sides. With a fork, prick the bottom of the crust. |

Meanwhile, in a skillet, brown 1 diced onion and cook until soft. Drain the cooking fat. Let cool. |

In a bowl, combine the 500 ml of 35% cream and 6 eggs with a whisk, until smooth. Stir in the onion mixture and 180 gr of grated cheese. Season with salt and pepper. |

Pour into the crust and bake in a preheated 190°C / 375°F oven for 45 minutes. or until the quiche is lightly browned. |
