120 gr Unbleached All-Purpose Flour
2 tsp Baking Powder
2 Eggs
180 gr Brown Sugar
1 tsp Vanilla Extract
125 ml Coconut Oil
125 ml Whole Milk
180 gr Chocolate

    Pre-heat oven to 175°C / 350°F. Grease and flour a 9x13 inch pan. Line the bottom with parchment paper.

    In a food processor, process 45 gr of oatmeal into a fine powder. Transfer to a bowl and add the remaining 45 gr of oatmeal, the flour, and 2 tsp of baking powder. Stir to combine. Set aside.

    In another bowl, beat 2 eggs, 180 gr of brown sugar, and 1 tsp of vanilla with an electric mixer until the mixture triples in volume.

    At low speed, drizzle in 125 ml of coconut oil.

    Stir in the dry ingredients alternately with 125 ml of milk.

    Add 180 gr of chocolate chips and stir with a wooden spoon.

    Pour into the prepared pan. Bake for about 1 hour or until a toothpick inserted in the centre of the cake comes out clean. Let cool and unmould. Let cool on a wire rack.
